The small milk producers who arc far off from the market and have no good transportation facilities, it becomes economical for them to convert milk into khoa and transport it to big cities. This increases the concentration soluble solids in the product as an aid to preservation and due to reduction of milk volume, the cost of storage, packaging and transportation is reduced. But the equipment for making the khoa in villages is less efficient, unhygienic and takes more time. It is more laborious and uniform quality of khoa can not be expected from such equipment
