Abstract

A stainless steel batch type of scraped surface heat exchanger has been designed and developed. Experiments were conducted using buffalo milk. The scraped surface heat transfer coefficient is dependent upon the rotor speed. The heat transfer coefficient is nearly independent of heat and material flux. From the experimental results, a correlation of power number as a function of speed, diameter, mass and density of the product was developed.
