Abstract

Experiments were concluded to study the sorption behaviour of whole milk powder, milk baby food and icecream mix powder at 38°C by exposing the samples to various relative humidities ranging from 7 to 85 percent. The sorption behaviour of fat-rich dried milk products were similar to dehydrated foods except that changes in EMCare not appreciable between 43 and 54 percent relative humidity. Physical changes such as colour, appearance and feel in milk products were quite noticeable at various relative humidities when stored for 30 days. Mono-layer moisture contents for various fat rich dried milk products and their critical moisture contents for storage of the products were determined
